What’s a realistic way to start strength training when you’re out of shape?

Start with basic bodyweight stuff since you're in an apartment with no gear. Focus on compound moves like squats, push-ups, and planks to build overall strength without needing equipment. Aim for three sets of each exercise, starting with what you can manage, say 8-12 reps for squats and push-ups, and 20-30 seconds for planks. Keep sessions to 30-40 minutes, three times a week, as you said.
Warm up with 5 minutes of light cardio, like marching in place or arm circles, to get the blood flowing and avoid joint issues. Follow that with the main exercises, and cool down with some stretches. Progress by adding reps or holding longer when things feel easier, usually after a couple weeks of consistent effort. Don't rush bumping up difficulty. listen to your body to prevent burnout.
Since you're busy, track your sessions in a simple app to stay motivated without overcomplicating it. That's all you need for steady gains without wrecking yourself.
Coming back to running after knee soreness

Idk, this worked for me when my knees complained. Three days a week, 30 minutes each: 5 minute brisk walk, then 20 minutes of 1 minute run and 1 minute walk at truly easy effort, finish with 5 minute walk. Each week I only add one extra minute of running inside that 20, keeping the rest as walks, and I stop if pain climbs during the run instead of after. Shorten the stride, keep cadence up, and stick to flat softer paths. On off days I did quick bodyweight work for glutes and quads and the tenderness faded.
Why is the nonstick coating on my air fryer basket peeling?

Annoying. The lip is where coatings start to go because that is where you grip, where it rubs, and where steam condenses. Even a soft sponge can snag a lifted edge and make it worse without you noticing.
Try changing the cleaning routine. Rinse while warm, use a soft cloth instead of a sponge, skip citrus based soaps and skip any scrub powders. Do not leave it wet on the rack. Dry it with a towel then a minute of residual heat in the machine. A tiny wipe of oil on the dry surface helps release next time and reduces scrubbing. Inside the basket set a small rack or liner so you are no longer scraping the wall when you shake food.

I'm following. I have mild hearing loss and am wondering if these might be a good first pair to try out, as needed. Did you get them? If so, how are they working out?
